Good morning! Coffee is a daily morning routine for us. We usually have ours with coconut/almond milk but today it’s just straight up and delicious with a side of a gorgeous view. 🙂

Morning Run & Commitment


Ok, I’m not a runner. Let’s be honest, I hate running. I am that person that thinks about how much I dislike running, while running. I’m sure I’m making it worse for myself but gosh darn it I am not a fan like I am of the Giants. (GOOO Gigantes!). Ok so I know it’s the fastest way to lose weight and so forth. But c’mon, if ya don’t love it, it’s a hard thing to force. So I’ve turned the tables in my motivation(s).

From the previous post, you know we have three adorable dogs. My personal goal is to run/walk them 3-4 times a week. I’m not going based off distance, but time. 40 minutes or more depending on schedule of sprinting, running, walking or a combo! The world is my oyster, right?

There are several motivations here ; 1. Exercise the dogs – especially the puppy who likes the feel of my nice shoes between her teeth when not entertained. 2. Getting outside. Nature is gorgeous and breathing the fresh air when you’re inside for work most of the day is a true gift. Sure I go in the gym and workout but there’s always something reviving about spending time outside that I love. 3. Get in better shape – for my diabetes and also for our wedding in September. 4. Feel better all day. There’s just something about getting a workout done in the morning.

So there you have it. I’m putting it out there and I officially have no excuses.

On our run this morning, stuff like this makes it more fun. Potty break?

Smoked & grilled salmon. Roasted cauliflower with cilantro & sea salt. Roasted brussel sprouts with olive oil and balsamic vinegar.

Baked Eggs in Bells!


This recipe is easy, looks pretty, and is healthy! You can modify the meat/veggie mixture to your taste and liking of course. That’s the beauty of this recipe, it’s all relative! Try it out 🙂

Baked Eggs in Bells

Baked Eggs in Bells

4 red or yellow bell peppers cut in half lengthwise and seeds removed (leave the green stem intact for looks if desired)

1 cup diced zucchini

1 cup diced yellow onion

1 cup diced portobello mushrooms

2 garlic cloves, minced

6 oz cubed pancetta or diced meat of choice

Cooking oil of choice (we use coconut oil)

8 eggs

Sea salt and pepper to taste

Optional: Fresh Herbs for garnish (basil, cilantro, chives etc.)

1. Preheat oven to 375.

2. Place bell pepper halves on a baking sheet and roast in the oven for 15-20 minutes.

3. Meanwhile, saute meat and onions together in the coconut oil over medium to medium high heat until the onions start to soften and the meat begins to brown. Add the minced garlic, zucchini and mushrooms and saute until the zucchini are al dente.

4. When the bell peppers are out of the oven, drain any moisture and pat dry with a paper towel. Fill each bell pepper halfway with the veggie/meat mixture.

5. Depending on the size of your bell pepper, you may be able to use two eggs. We often use one whole egg with yolk plus one or two egg whites for more protein!

6. Place the stuffed bells in a large casserole dish or small baking sheet, cover with foil and bake at 375 for 35-40 minutes – until the egg whites are set. Check after 20 minutes. If you have a smaller bell pepper with one egg, your cooking time will most likely be 25-35 minutes depending on your oven and how you like your yolks.

7. OPTIONAL – top with fresh herbs, diced tomato, or avocado.

A Rainy Saturday

There’s something about rainy days that I love… I went outside this morning to check out our garden to see how our veggies are doing. With the rain in the past few days, everything has been growing like a weed! It’s awesome! We planted a various amount of peas and it’s looking good 🙂 #everyonesgottagrub #homegarden #rainydays #nature

Good Morning! A simple and delicious breakfast of champs!

Coffee with Almond/Coconut milk (of course).

Steel cut oats (1/2 cup) with a sliced banana, blueberries and strawberries. Drizzle a tiny bit of honey if you have a sweet tooth!

Note: I use bananas that are not as ripe because very ripe bananas have a higher sugar content as well as a higher glycemic index!

Our Favorite Fresh Herbs from Our Garden


We have become quite the fan of our home garden… Granted it’s not incredibly elaborate but it gets the job done. We have always been huge fans of cilantro/coriander & chives. We add it to almost everything – tacos, burritos, stiffly, eggs, mixed in with veggies (roasted cauliflower in particular), salads, or made in to a cilantro-olive oil dip! Cilantro has been known to have great antioxidant properties also!
