An awesome reminder…

I have always been very weight-conscious my entire life. For the past 12 years I was misdiagnosed as Type 1 instead of a Type 2, and provided with the incorrect dosages and medications. This caused a huge weight problem due to excess insulin in my body. The extra insulin I was taking (Novolog in particular) was stored as fat which caused me to be unable to lose weight. I was exercising 3-4hrs a day, and eating Paleo style 90% of the time. I didn’t understand what I was doing wrong. I felt fat, confused, frustrated and helpless. Through a change in the way I was eating, as well as seeing the right doctors, this has subsided. To this day I still feel very conscientious of my weight, but at least now I have control of my body – not diabetes! 🙂

This photo, to me, reminds us that our society puts too much pressure on appearance, and doesn’t see the truth behind an image. There is always so much more than what meets the eye.

Good Morning! A simple and delicious breakfast of champs!

Coffee with Almond/Coconut milk (of course).

Steel cut oats (1/2 cup) with a sliced banana, blueberries and strawberries. Drizzle a tiny bit of honey if you have a sweet tooth!

Note: I use bananas that are not as ripe because very ripe bananas have a higher sugar content as well as a higher glycemic index!

Our Favorite Fresh Herbs from Our Garden


We have become quite the fan of our home garden… Granted it’s not incredibly elaborate but it gets the job done. We have always been huge fans of cilantro/coriander & chives. We add it to almost everything – tacos, burritos, stiffly, eggs, mixed in with veggies (roasted cauliflower in particular), salads, or made in to a cilantro-olive oil dip! Cilantro has been known to have great antioxidant properties also!

I didn’t discover its absence until I developed Thursday’s recipe (hint: it rhymes with “beet oaf”), when I couldn’t find my recipe online. The history of ketchup is pretty awesome. It all started with garum, an ancient fish sauce first used by the Ancient Greeks and later the Romans. It reached Asia some 2,000 years ago via trade routes, and became a staple in many Asian countries, particularly Vietnam (where they later perfected the sauce using anchovies). Vietnamese fish sauce as we know it today entered China about 500 years ago, and the Chinese (particularly those in the Southeast providence of Fujian) spread it around the rest of Asia…

True Portion Control – China

Great tips! When I took a trip to China five years ago, the plate size was equivalent to our salad dishes. It really helped in eating smaller portions! Chopsticks always help in taking smaller bites as well. 🙂
